Cheese: Serving Suggestions from a professional cheese maker

Like wine, the serving of cheese can be a mystifying event. While I could write rivers of ink to write on this topic, there are a few simple ideas that you can start with at home. The first thing is to relax and have fun with tasting and pairing of cheese with different foods. Make it part of a dinner or party with family and friends.We have included descriptions of imported Italian cheese from our deli, so why not start with these? 


Tasting Plates

The idea of a progression is central to creating your cheese plate. Always start with a mild cheese and "progress" to stronger and bolder flavours, usually younger, fresh and mild to older or aged cheeses that impart more complexity. Alternate textures as well where possible from soft and springy to firm, to oozy, to hard and brittle (such as Oude Kaas or Parmigiano-Reggiano).
